
One of our plant-based receipes that is nutrient-dense and loaded with protein.
Ingredients:
- 1 cup cooked lentils
- 2 cups fresh spinach
- 1/2 cup diced bell peppers
- 1/2 onion, sliced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
Instructions:
- Heat olive oil in a skillet over medium heat.
- Add the onions and bell peppers, sautéing until softened.
- Stir in the lentils and season with cumin, smoked paprika, salt, and pepper.
- Add the spinach and cook until just wilted. Serve as is or over brown rice for extra heartiness.
