High-Protein Lentil & Spinach Stir-Fry (Plant-Based)

One of our plant-based receipes that is nutrient-dense and loaded with protein.

Ingredients:

  • 1 cup cooked lentils
  • 2 cups fresh spinach
  • 1/2 cup diced bell peppers
  • 1/2 onion, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a skillet over medium heat.

  2. Add the onions and bell peppers, sautéing until softened.

  3. Stir in the lentils and season with cumin, smoked paprika, salt, and pepper.

  4. Add the spinach and cook until just wilted. Serve as is or over brown rice for extra heartiness.
