Ingredients:
- For the Chicken:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- For the Avocado Mango Salsa:
- 1 ripe mango, peeled and diced
- 1 large avocado, peeled and diced
- 1/2 red onion, finely chopped
- 1/2 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions:
- Prep the Chicken:
- In a small bowl, mix olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Rub the mixture all over the chicken breasts.
- Grill the Chicken:
- Preheat the grill to medium-high heat.
- Place the chicken on the grill and cook for 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C) and the juices run clear.
- Remove from grill and let rest for a few minutes.
- Make the Avocado Mango Salsa:
- In a medium bowl, combine diced mango, avocado, red onion, cilantro, and lime juice.
- Season with salt and pepper and gently toss to combine.
- Serve:
- Slice the grilled chicken and serve topped with a generous scoop of the avocado mango salsa.
