Creamy Coconut Lentil Curry

Creamy Coconut Lentil Curry is a rich, comforting, and plant-based dish packed with protein and warming spices.

Ingredients:

  • 1 tablespoon oil (or water for sautéing)
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1/2 teaspoon chili powder (optional)
  • 1 cup red lentils, rinsed
  • 1 can (14 oz) coconut milk
  • 2 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 2 cups fresh spinach (or 1 cup frozen)
  • Salt and pepper to taste

Toppings (optional):

  • Fresh cilantro
  • Lime wedges
  • Cooked rice or naan for serving

Instructions:

  1. Heat oil in a large pot over medium heat. Add the onion and sauté for 3-4 minutes until softened.
